You must not have received the user's manual with the bike. The clock setting is spelled out there. Digital versions of the appropriate user's manual are available on this forum. Anyway, here's the process:

4.4.5. Clock settings
To carry out clock settings, press the "SET" button
until viewing the "CLOCK SETTING" caption.

WARNING
The display modes may be changed or set
when the engine is off, the gear in neutral, the
motorbike stationary with your feet on the
ground. Do not change the display while driving.

Press the "OK" button for less than four seconds; the
hour digit begins to flash.
By pressing the "OK" button again for less than four
seconds, the hour digit is increased by going to the following
numeric value.
Press the "OK" button for over four seconds; the
selected hour digit is confirmed. If instead one presses
the "SET" button for less than four seconds the setting
procedure is interrupted.
After having carried out the hour digit setting, the
dashboard automatically switches to the minute digit
setting. The minute digit begins to flash.
By pressing the "OK" button for less than four
seconds, the minute digit is increased by going to the
following numeric value.
Press the "OK" button for over four seconds; the
selected minute digit is confirmed and the dashboard
returns to "CLOCK" mode. If instead one presses the
"SET" button for less than four seconds the setting procedure
is interrupted.
