"S"-mapping usage on 2010 F4

The manual only explains how to turn the "S" mapping on, but how do I turn it back to normal? The more important question would be, what is the real differnce between both mappings?

The procedure for getting back to 'normal' mode is the same. Hold 'start' for 2 seconds, then press twice to switch modes. By the way the two modes are 'Sport' and 'Rain'. Rain mode cuts the power, I just leave it in 'Sport' mode.
