Seat height is just how far from the ground the top of the seat is and can be changed with different padding, shape, etc. Ergonomically it can be important, but from a handling perspective it has little influence.
Ride height is the relevant distance from the rear axle in the swing arm to the frame and affects the steering geometry of the chassis.
I used to be fast....now I just dream about it.
